I'll take them one by one:
Nabari No Ou - this show is decent. I'm not a big fan, but basically it feels like a more mature, more modern version of Naruto (but not as nonsensical). The characters develop nicely (particularly in the 2nd half of the show) and the art is beautiful. The animation if the fight scenes were pretty well done. Takes a while to get going.
Berserk - it's essentially a show about the rise of a mercenary army during a war between 2 kingdoms. It's very dark (in tone and in color... seriously, very dark, practically no humor), very emotional, and brutally violent. It's probably my personal favorite show, but I can easily see how some people wouldn't like it. The pacing is a bit slow, the animation is weak (some fight scenes we just see stills... basically manga pages, but colored), we only get to know 3 out of hundreds of characters (although those 3 are developed wonderfully and are among the greatest characters in anime history) and some of the villains are a little nondescript (essentially, cackling morons). It's very deep (Guts' "sparks" speech comes to mind), and very dark (I can't stress this enough). The ending is very powerful, but a bit disappointing, as there is a lot left of the story. But it's a very thought provoking and sad show. If you can get through the first 3 or 4 episodes, it's worth finishing.
Claymore - A show about an organization of demon hunters. Personally, I thought this show was crap. The concept is great, but the animation in some of the fight scenes was atrocious. It kind of reminded me of DBZ battles: just limbs moving so fast it's a blur. The characters weren't that interesting to me, and the character motivations are pretty cliche and predictable. It was very poorly written (how many times does someone say something along the lines of "Don't die! I won't forgive you if you do!"). The ending is also worthless (think of Inuyasha's ending). It has a HORRENDOUS pace. One battle, with an enemy that wasn't even introduced until 2 episodes prior to the start of the fight (and who we know nothing about, nor do we care about), lasted 2 and a half episodes. That's inexcusable for a 26 or so episode show. It's also very violent. I know some people love it, but I can't figure out why. Judge for yourself.
Code Geass - I would say it's similar to Death Note. An ambitious kid gets supernatural powers and decides he wants to overthrow the standing establishment. However, Lelouch is a much more interesting character than Light: his motivations are deeper, and his sense of morality and ties to the kingdom he's trying to overthrow make him a much more relatable and complicated character. The philosophical undertones are a lot deeper and are explored better than in Death Note. It's deep and has some dark moments, but it manages to balance some great humor elements, particularly with the other students. The characters are diverse, and the main ones are very interesting... every one has their own motivation for the role they play. Some are a little underdeveloped, but that's probably being done in the sequel (R2, which I have not watched yet). If I had to recommend one of these shows to you, it would probably be this one.
Hunter X Hunter - I'm only about halfway through this show, but it's great so far. I'll let someone else give you a better description, since I'm sure many people on these boards have finished it. I'll just say if you're into fantasy action like Naruto, One Piece, or Yu Yu Hakusho, then this is up your alley because it's signifcantly better than all of those shows.
