I see a few people mentioned Kenshin and Berserk. Let me just clarify something: the animation in the fight scenes of those shows are pretty weak. There's a lot of "fighting," but in Kenshin, a lot of the battles are dialogue heavy, with side people narrating. In Berserk, a lot of the fight scenes are filled with "stills" as opposed to fluid animation. So, they may not be up your alley in terms of action (although I loved both shows).

I liked Bebop more than Champloo, but there is considerably less action. It's more character-driven.
