It's basically lots and lots of little cells filled with gas, placed between two plates of glass. A chip in the display tells what voltage to run through each cell, and causes the gas to emit light. That's the quickie version...
Plasma is definitely clearer and nicer, but in my opinion not enough to justify the risk. Plasma is expensive, and one firm tap has the potential to break the display, rendering it useless. New TV time. LCD is almost as good, is less-costly, and will last longer. Then you only have to worry about dead pixels...
